Shortcut Roasted Potatoes Recipe

One Saturday evening, I was engrossed in a thrilling novel. Time traveling back and forth between Boston and Germany, just after WWII, and Soviet-occupied Poland during the war, I followed along with a young woman who was trying to escape her dubious past while a team of war criminal hunters tried to bring her to justice. About a third of the way through my adventure, I looked up and realized the time.

The solution, of course, was to adapt my recipe for the air fryer. Instead of an hour, I had burgers and roasted potatoes dished out and ready in 35 minutes.

This is the perfect side dish to whip up when you’re busy and don’t have time—or want to spend the time—n the kitchen. Roasted potatoes pair well with just about any main dish, but with the cast iron skillet burgers they were amazing! These air fryer roasted potatoes are crispy and perfectly seasoned. Be sure to serve them with your favorite dipping sauce. My family loves Heinz ketchup or A1 steak sauce.

  • 7 russet potatoes
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Rinse the potatoes and then slice them in half. Cut each half into quarters and place them in a large mixing bowl.
  2. Add sea salt, garlic powder, and extra virgin olive oil to the bowl. Toss potatoes to coat well. I find using my hands, while a bit messy, works best.
  3. Line your air fryer basket with a silicone mat or parchment paper. Generously spray with nonstick cooking spray.
  4. Pour the potatoes into the air fryer basket. Make sure they are arranged in a single layer.
  5. Set your air fryer to 400 degrees Fahrenheit and fry the potatoes for 35 minutes. At the halfway point, give them a shake.
  6. Serve generous portions as a delicious side dish or snack. Enjoy!
