Meatloaf sometimes gets a bad reputation in the cooking world. It can be bland, dry, and just not that appetizing.

But meatloaf made well can be really yummy and full of flavor. Not only that, but it’s an easy-to-make, versatile addition to a meal and can feed a large family, which should make it a part of everyone’s regular meal rotations.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup quick-cooking gluten-free oats (or gluten-free breadcrumbs)
  • 1/3 cup milk
  • 2 tablespoons bbq sauce of your choice
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 1 teaspoon chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 large egg

Instructions

  1. Preheat the oven to 375 degrees. Spray a baking sheet with cooking spray or olive oil.
  2. Put all of the ingredients into a mixing bowl.
  3. Using your hands, combine all ingredients.
  4. Shape the meat mixture into a loaf and place it on the baking sheet. (I mean, how easy is this recipe?!)
  5. Bake at 375 degrees for 40 minutes, checking with a thermometer to ensure it is cooked to at least 165 degrees.
