  • Binder: You need some kind of binder, which is the bulk of most cookies, such as flour and eggs.
  • Sweetener: Typically, you want your cookie to have a sweet flavor, which is where the sugar comes into play.
  • Oil: You’ll need an oil component for the cohesion of the cookie and to keep your cookies moist.
  • Leavening agent: As long as you’re not looking to have cookies without any lift to them, you will want a leavening agent such as baking powder or baking soda to make your cookies rise.

Understanding what makes a cookie a cookie and how the ingredients work together will allow you to get an idea of how you can alter the different components to your liking.
