Homemade Jam Markets BBQ Jerk Chicken Wings
Ingredients:
- 2 lbs (about 1 kg) of chicken wings
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp of pimento seeds
- 1 tsp(3 twigs) of thyme
- 3 scotch bonnet peppers
- 1 tsp smoked paprika (optional for a smoky flavor)
- 1 tsp baking powder (for crispy wings)
- 1 cup BBQ sauce (your favorite brand or homemade)
- 1 cup of Jerk Sauce
- 2 tbsp honey or maple syrup (optional for extra sweetness)
Instructions:
1. Preparation:
- Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper, then place a wire rack on top of the baking sheet. This allows the wings to cook evenly and become crispy.
- Pat the chicken wings dry with paper towels. Removing excess moisture helps achieve crispy skin.
2. Seasoning the Wings:
- In a large bowl, combine the salt, black pepper, garlic powder, onion powder, pimento seeds, thyme, 3 scotch bonnet peppers, smoked paprika (if using), and baking powder. The baking powder helps the skin become crispier.
- Toss the wings in the seasoning mixture until they are evenly coated.
3. Baking the Wings:
- Arrange the seasoned wings on the wire rack, ensuring they are spaced out and not touching each other. This allows hot air to circulate around each wing for even cooking.
- Place the baking sheet in the preheated oven and bake for 40-45 minutes, flipping the wings halfway through cooking (at around the 20-25 minute mark). The wings should be golden brown and crispy when done.
4. Preparing the BBQ Sauce:
- While the wings are baking, prepare the BBQ sauce and jerk sauce. If you’re using store-bought sauces, pour them into a bowl and add honey or maple syrup if you prefer a sweeter glaze. If making your own BBQ sauce, mix together your ingredients, each in its own small saucepan and heat over low heat until slightly thickened.
5. Coating the Wings:
- Once the wings are fully cooked and crispy, remove them from the oven.
- In a large mixing bowl, toss the wings in the BBQ sauce and Jerk sauce until they are thoroughly coated.
6. Finishing the Wings:
- Return the coated wings to the wire rack on the baking sheet. This allows the sauce to caramelize slightly.
- Bake the wings for an additional 5-10 minutes, or until the sauces are sticky and slightly charred.
7. Serving:
- Remove the wings from the oven and let them rest for a few minutes.
